string beans

String beans are narrow green pods which grow on a climbing plant. They are also some times known as green beans or snap beans. String beans are high in iron and protein.

String Beans and Potatoes

2 medium potatoes (about 1/2 pound), unpeeled

1/2 pound string beans, trimmed

2 cloves garlic, diced

1 medium onion, chopped

1 large tomato, chopped

1/4 cup red wine vinegar

2 tablespoons oil

salt and pepper to taste

1.       Cut potatoes into 1/4" thick slices. Cook the potatoes in boiling salted water until just barely tender, about 10 minutes. Drain.

2.       Meanwhile, cook the beans in boiling salted water until crisp-tender, 1-1/2 - 2 minutes. Rinse under cold running water; drain.

3.       Cook onion and garlic in oil until onions are brown. Stir in vinegar and tomato. Reduce heat to medium-low and toss in potatoes and string beans. Cook tossing gently for 5 minutes.
